Spaghetti Squash Caprese





Ingredients 
1 Medium-sized spaghetti squash
Salt & pepper
2 Tablespoon Extra Virgin Olive Oil
2 Large Garlic Cloves, finely minced
1 pint Cherry Tomatoes, Halved
1 package of organic Mozzarella cheese, shredded 
Fresh Basil 

Pasta is one of favorite foods but everyone knows that pasta is not very good for you. I have seen a lot of people using vegetables in order to replace pasta. The recipe called for a one spaghetti squash which you would cut in half and let roast in the oven. But.... I took the easy route, our local grocery store had pre-cut spaghetti squash available for the same price! 

This recipe was very simple. First, you add a little bit of olive oil, saute your finely minced garlic until it browns, add your tomatoes of your choice then let those cook for 2-3 or until the juice starts to come out of the tomatoes. Next, just add your noodles. I had to add more olive oil on the noodles so that they all had a even coating on top. I let the noodles cook for about ten minutes then added the last final touch of fresh basil and mozzarella cheese. Once the cheese is all melted it's time to eat it up.

This Spaghetti Squash Caprese was delicious. The pictures that I took on my Iphone 6s didn't do the bright color of orange from the squash and red of the tomatoes any justice. It took all but 30 minutes to create this quick, easy and healthy dinner for two. Also, another great thing about this dinner was the ticket cost that it took to buy all the ingredients. The final cost came around $20 dollars, it feed two people and allowed for the BEST THING EVER. Leftovers! This recipe would allow for a lot of other food to be added as well. We went for the vegetarian option but you could add grilled chicken if you would please. Thank you so much for reading. and lastly ENJOY!
