Stuffed Bell Peppers



Ingredients

3 large bell peppers (any color)
1 lb lean meat
2 tablespoons chopped onion
1 cup cooked rice
1 clove garlic onion
1 can (150z) tomato sauce
3/4 cup shredded mozzarella cheese (3 oz)

Steps

1 Cut thin slice from stem end of each bell pepper to remove top of pepper. Remove seeds and membranes:rinse peppers. If necessary,cut thin slice from bottom of each pepper so they stand up straight. Preheat oven to 350 degrees

2 In a skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in rice, salt, garlic and 1 cup of the tomato sauce, cook until hot

3 Stuff peppers with beef mixture. Stand peppers upright in glass oven safe bowl. Pour remaining tomato sauce over peppers

4 Put in oven and bake for 15 minutes or until peppers are tender. Sprinkle with cheese.


This has been one of my favorite meals that I have cooked in a long time! The colorful presentation alone makes your mouth water. The stuffed bell peppers and the meat mixture with the rice was a great balance of healthy and cheesy. I would ten out of 10 recommend that you try it.

In total this meal was only twenty dollars. Which is crazy cheap because you get three big bell peppers and lots of protein. I have attached some places where you can get fresh bell peppers for a good price and it keeps it local if you are in the Topeka, Kansas area.
