Stuff Chicken Breast with Mozzarella Spinach

Mozzarella Spinach Chicken Breast- If you are craving something is seriously cheesy and bursting with a variety of different flavors, this delicious dinner is one for you to try. It only takes 30 minutes, making it perfect for a meal after a busy day of work or school.

Ingredients
serves 2
2 boneless skinless chicken breasts,
butterflied
3 tablespoons olive oil, divided
2 cups fresh spinach
1 package organic mozzarella cheese
4 garlic cloves
2 cups chicken stock
1 can tomato crushed
1/2 teaspoon balsamic vinegar
salt and pepper

Directions

1. In a skillet saute your minced garlic in a tablespoon of olive oil for 2-3 minutes or until brown. Add can of tomato and chicken stock, bring to a boil and simmer over low-medium heat until thickens. Stir in balsamic and add salt and pepper. Preheat oven to 350 degrees.
2.  In the meanwhile: in another skillet add olive oil and little bit of garlic over medium hear for 1-2 minutes, add spinach and stir frequently until wilted and cooked, about 2-3 minutes. Set aside.
3. Butterfly chicken breast, slice lengthwise down the middle but not all the way. Season chicken with salt and pepper on both sides. Place mozzarella cheese and spinach in the slit. Repeat with each chicken breast.
4. Pour tomato and garlic mixture in a deep glass oven safe bowl and fill a couple inches up. Place stuffed chicken breast in same glass bowl.
5. Cook for 30 minutes in the oven. Let cool.

Beware: while cooking this dinner your kitchen will smell so good! The best thing about this dinner is how much the total groceries were. It only cost fifteen dollars to make a delicious tasting and healthy dinner.

As you can see this dish has a variety of colors with pops with green and red. Not only is there plenty of cheese but while cooking in the oven the juice will make prevent the chicken from getting dry. My roommate said that "It was yummy in her tummy" so if that doesn't want you to try it, I'm not sure what will.
