Shrimp Fajitas

Ingredients

Prep time: 10 Minutes
Cook time: 25 Minutes

  • Bell Peppers (3)
  • Red Onion (1)
  • Avocado
  • Shrimp
  • Flour Tortillas
  • Olive Oil
  • Salt
  • Cumin Powder
  • Garlic Powder
  • Chilli Powder
  • Lime Juice

Steps



  1. Preheat oven to 400 degrees
  2. Wash off bell peppers and cut in slices of your desired size then place them on cooking tray
  3. Begin to slice up the red onion and then place them on same cooking tray as bellpeppers
  4. Swirl Olive Oil all over the veggies on the cooking tray
  5. Add salt and all the other powders on top of veggies
  6. Once all veggies are covered mix up the veggies until everything is evenly coated
  7. Place in oven for 20 minutes
  8. Once timer goes off place uncooked shrimp into the same tray
  9. Sprinkle lime juice on shrimp
  10. Place shrimp and flour tortillas in oven for five minutes
  11. While cooking tray is in the oven, Cut up your avocado and put lime juice in mixture
  12. Take out the cooking tray, let cool, Enjoy!

The smell of this dish when it was cooking made me even more excited to get to try something that includes two of my favorite things SHRIMP and BELL PEPPERS.  This was a super easy meal to cook because you didn't have to supervise the food when it was cooking which is great when you're binge watching Gossip Girl (again). I would give this recipe a 10 out of 10. I loved it!!!
