Banana Pancakes

Ingredients
1-1/2 cups of flour
2 tablespoon sugar
2-1/2 tablespoon baking powder
1/2 teaspoon salt
1 small brown banana
1 cup of milk
2 large eggs
1/2 teaspoon of vanilla extract
3 tablespoon unsalted butter

Directions

1. Whisk together flour, baking powder, sugar, and salt in a bowl
2. using a fork mash the brown banana almost smooth
3. whisk the eggs into the mashed banana
4. add milk and vanilla extract
5. Pour banana mixture and melted butter into the dry ingredients
FYI: the batter will be thick and lumpy so don't worry! 
6. heat the vegetable oil with the pad of butter on a non-stick pan
7. Spoon pancake mixture and cook until both sides are golden brown
8. Top with all your favorite toppings
